I'm betting that I'll have a pb&j later, too.  We received some amazing homemade strawberry jelly and I don't think my habit will end until we run out of it.  It's so good, that I think I'm going to make my own next year.

First day of 30 Days Green!

Woo!  It's finally here.  My extra motivation to eat healthier and to get in the habit of a little exercise other than chasing around a toddler and a crawling baby.

*No salad today, but there's always tomorrow. :)

Exercise: 30 minute walk followed by an hour or so of yard work, trimming and hauling pieces of shrubs and trees

Today's food:

Kashi Cinnamon Harvest cereal with soy milk

1 qt Strawberry Fields smoothie - from Green for Life - strawberries, bananas, romaine, + my own addition of a bit of soy milk, flax oil, and emergenC

Lunch: teriyaki quinoa & vegan mac 'n cheese (leftovers!)

2 cups of peanut butter banana smoothie with flax oil - thanks to Aidan who demanded a 'smoothie cup' and wanted nothing to do with it the second after I blended it.

Dinner: the last of the tortilla soup enchiladas

Today's food - August 16th, Sunday

Oatmeal chocolate chip walnut cookies - yes, sadly this was my breakfast.  They are delicious, but sinful!

Lunch: Vegan mac 'n cheeze - featuring nutritional yeast, butternut squash soup, leeks, garlic, and peas.  sprinkled with flax meal

3 cups Green smoothie:  spinach, flax oil, 2 packs strawberry emergen-C, 2 handfuls of frozen blueberries, flax oil, buckwheat honey, a banana, some pineapple, and coconut flavor

Dinner will be: unstuffed bellpeppers

4 cups green smoothie - spinach, pineapple, blood orange, flax oil, rice milk, coconut flavor (idk why we have this, gonna look for extract)

Umm, yeah, still working on that salad part.  I'm making a good shopping list and will hopefully have it ready by the 17th.  I just needs some spring mix and lots more nuts. :)

I can't remember what all the boy ate, but it wasn't as much as the day before.

oatmeal, 1/2 a granola bar, apples and almond butter, a little bit of tortilla soup + 1 tortilla

Aidan:

full bowl of maple nut oatmeal + flax

some mexican rice

3 bites of lentils and rice

6 or so sweet potato fries

3 chocolate chips

1/2 pumpkin granola bar

apple slices and almond butter

dry organic O's

a little pasta with vodka sauce

1 cashew

guacamole and 3 or 4 baby carrots

Eating for Health

It seems that we are all coming down with an illness, and it's a great time to get my menu in check and maximize the health factor as much as I can in a gradual and yummy way.  So, here I go, food blogging time.

Oh, and our diet is still vegan with the exception of honey.  Our health trumps all else at this juncture.

Recent meals:

Vegan pasta bake with beer bread
- Gladcow cookbook p36
   I shredded in the zucchini to hide it from Aidan.  It worked!  He ate it!   I'll admit the beer bread wasn't my healthiest move, but it was yummy.

Leeks & Bean Cassoulet with Biscuits - Veganomican p 172
   This was delicioius and so hearty.  I added mushrooms because I lurve them.

Teriyaki Quinoa with oven baked sweet potato fries - EDBV p 167
  This was ok, but it was a quick meal.  I subbed in hoisin sauce instead of sesame oil because I was out.  I think it would be great in a stir fry with more veggies added.

Black Bottom Tofu with cashew coconut rice - Veg Times old issue
   I really like this dish, but I feel like the tofu needs to be marinated before hand.  It does soak up some of the flavor, but not enough for my tastes.  I love the rice.

Tonight:

Honey Baked Lentils over jasmine rice  with oven baked sweet potato fries

   Haven't tasted it yet, but it smells nice.  I used brown lentils.  The jasmine rice came out well in the zojirushi if I set it to semibrown rice  with 2 (of their) cups rice and filled with water to the 2.5 line.

I'm addicted.  I joined back in May - which was pretty late to the game, but I've only just started using it now.  I can't believe what an awesome resource I was missing out on.  It is absolute perfection.  I can easily keep track of things that I want to knit, keep track of my stash, needles, hooks, patterns, notes about gauge swatches, etc.  It's also very visual, uber user friendly, and has a nice clean layout.  It's simply genius.

So, my queue right now looks like:

2 Star crossed slouchy berets - both in blue sky cotton - 1 tomato, 1 graphite
1 Presto Chango sweater for Aidan - blue sky cotton - expresso
1 Lady Eleanor scarf - pour moi - Great Adirondack Bamboo Cotton - old english
1 Sleepy Sarah - an amigurumi practice pattern that I want to try, but this is really low on the list.

Of course, the queue on the actual ravelry site has links galore and photos and places for notes, etc.  It's likely to change as I think of other things to knit for gifts.  I'm so tempted to start on the lady eleanor scarf, but it's going to be a long knit, so I definitely have to get my gift knitting done first.  Plus, I don't have the right sized circs for it, so maybe they can be a gift from family who never knows what to get me.

Why do I want to learn amigurumi?  The adorableness could kill a person.  I have a book with super cute patterns in it, but this turkey is simply AMAZING.  I would so love to crochet this up for a gift for Aidan for Thanksgiving, but I'm just not that skilled, yet.  I will be purchasing the pattern, though.

I'm not a big celebrity watcher, but I did come across the cover pic for the November 2008 issue of W magazine.  I think this is the most beautiful photo that I've ever seen of Angelina Jolie.  This can only be good for getting more people to consider breastfeeding their children if they hadn't already.

Happy Mother's Day!

I feel like I kinda missed it again this year.  Yesterday, we were supposed to have our little family only mother's day, but I chose to use the day to house hunt instead.  We have company coming over today & tomorrow and next weekend, so we wouldn't have been able to house hunt for a while otherwise.

I am glad to have mom coming over to visit this weekend.  Her husband is coming, too.  They're not bad to have around at all, but finding/cooking food with them is difficult.  Cajun is probably the perfect polar opposite to vegan.  If nothing died for the meal, then most cajuns aren't all that interested.  I know, I used to be one.  I was going to make Rigatoni with Vegetable Bolognese (minus the cheeses), but I'm scared it would be wasted on him.  He likes American and Cajun and not much else.    The other thing I would have liked to had for mothers day would have been some BBQ Pomegranate Tofu with coconut lime rice.  I was also thinking of making some of the pineapple cashew quinoa stir-fry with green bean almondine, but I don't feel like having my food scoffed at.

Wow, what a whiner. :p

I love KPFT.  Check out today's Democracy Now (aired at 9am CST) which talks about diamonds and chocolate.  You will probably learn something, even if you already know how shady the industry is.

This song brought tears down my cheeks the first time I heard it.  I still tear up with it.  It's beautiful, it's inspiring, and it's full of hope.
